Despite its name, Buckwheat is not a cereal grain. In India, it is better known as Kuttu, and for generations it has been a familiar ingredient in kitchens, particularly during Navratri, Ekadashi and other fasting occasions.
High in the hills of Uttarakhand, where traditional crops have long been part of mountain food culture, Buckwheat has found its own place on the Indian plate. Its naturally earthy, slightly nutty flavour gives it a character that is quite different from everyday rice and wheat.
Just Organik Organic Buckwheat Hulled, also known as Kuttu Giri, is sourced from the high hills of Uttarakhand. The grains are carefully hulled to remove the tough outer husk, leaving behind the clean, edible kernels, commonly called buckwheat groats.
Buckwheat is naturally gluten-free and provides dietary fibre, plant-based protein, magnesium, phosphorus, manganese, copper and iron, along with naturally occurring antioxidant compounds. Its protein is also notable for providing a good balance of essential amino acids compared with many common plant foods.
While Kuttu is perhaps best known in India for fasting, there is much more to this traditional ingredient. The hulled grains can be cooked into Kuttu khichdi, simmered into porridge, prepared as an upma-style dish, or cooked and served with vegetables, curd, dal or other suitable accompaniments.
The whole kernels can also be added to salads and grain bowls for their distinctive texture. If you prefer using Kuttu as a flour, the hulled grains can be ground before preparing familiar Indian recipes such as Kuttu roti, cheela and pakora.

For one person: Approximately 50–60 g of dry hulled Buckwheat (Kuttu Giri) is a practical starting quantity when using it as the main grain in a meal. Adjust according to appetite and the other ingredients being served.
Basic cooking method: Rinse the Kuttu Giri thoroughly under running water. Soaking it for around 20–30 minutes can help shorten the cooking time. Drain and cook with fresh water until the kernels become tender. Once cooked, cover and allow the buckwheat to steam for 5–10 minutes. Fluff gently before using.

Rewards are calculated on qualifying completed referred sales recorded in Just Organik's systems.
